Not trying many new recipes this week, decided to stick to what I know to save time. Monday night my new cooking club is meeting for the first time, I’m excited! It’s basically just a group of other newlyweds that want to learn new skills and figure it’s cheaper to teach each other than take classes
It should be a lot of fun! The weather is improving and I’d like to spend more time outside and less time in the kitchen!

Monday: Julia-cooking club appetizer night. Making bruschetta with smoked mozzarella Tyler- spinach salad with grilled salmon.
Tuesday: chicken orzo salad w/goat cheese
Wednesday: slow cooker beef stew
Thursday: broccoli-cheddar quiche
Friday: Chick-fil-a baby!

I am optimistic that I will spend more time in the kitchen this week actually cooking our meals instead of scrounging around or ordering take-out! I’m also optimistic that spring weather will return here in Kansas and we will have NO MORE SNOW until at least November. One can only hope! As always I will post the new recipes I try if they actually turn out. Tyler is about to make the beef and snow pea stir fry from last week’s menu plan Monday since I didn’t get around to buying the ingredients for it until today!

Monday: beef and black bean chili 4 WW pts per serving
Tuesday: pecan crusted salmon and mashed cauliflower (anyone have a good recipe for this side dish they can recommend? I’ll probably just wing it if I can’t find a good one.)
Wednesday: Happy hour with my friends, so I will be eating crappy bar food
Thursday: *new recipe, will be seriously modified to be WW friendly!* spinach and feta pasta with pine nuts
Friday: eating out or homemade pizza
Saturday: haven’t thought that far ahead

Well another week begins, I have been so busy over the weekend I haven’t had much time to plan out meals, but fortunately 2 nights are already taken care of, and we’ll probably get carry-out on Friday night so I only have to plan 2 meals
Nice!

Monday: Cooking Light’s hearty lasagna (8 WW points)
Tuesday: Women’s Group at my house! Pizza for dinner and I’m making chocolate fondue for dessert.
Wednesday: Dinner at the in-law’s, my sister in law and niece and nephew are coming through town.
Thursday: Beef Stir Fry with Snow Peas (from my WW cookbook) (2 WW points)
Friday: Chick-fil-a!

Perhaps against my better judgment I am trying a couple of new recipes from my WW cookbooks this week. I hope they turn out better than the others I’ve tried recently! I hate hit or miss cookbooks. I have really lacked the desire to be in the kitchen recently, this usually happens after a month or so on WW, I start to feel restricted and frustrated and just want to give up on cooking and planning altogether. I just want it to get easier. Fortunately that’s where Tyler steps in, if I put the recipe in front of him he will make dinner. He’d much rather do that than order out. He made the falafel for lunch today and oh man it was delicious! Better than the last time when I made it, I’m not sure what he did but it was fabulous. Definitely try it out if you are looking for a healthy meal. Stop in on Tuesday this week to see my debut with Tuesdays with Dorie, it’s not WW friendly but chocolaty and SO DELICIOUS! Now that Lent is over you will see more baked goodies around here, though I will not be eating them all, my friends, family, and co-workers will benefit!

Tuesday: Turkey Sausage with Peppers and Polenta from WW All Time Favorites

This is a big week for me! I turn 24 on Wednesday. Tyler and I are going to PF Changs on the Plaza to celebrate, I can’t wait for those chicken lettuce wraps! Tyler has never been before, hopefully he’ll enjoy it as much as I do! I tried to choose meals this week that are quick to prepare. I found myself not cooking very often last week because I was tired or cranky or busy. As a result, I have no clue what we ate for dinner last week, but quite a few pieces of produce (and some chicken breasts) went bad and I had to toss it out. So I am setting the bar low this week
Lots of 30 minute meals so that I can do other things in the evening, like exercising for Walk Kansas or maybe trying a recipe from my new cookbook.

Monday: Chicken Orzo Salad w/ goat cheese 6 WW pts per serving
Tuesday: Tilapia Oreganato 4.5 WW points per serving served w/couscous and roasted broccoli
Wednesday: PF Changs for my 24th birthday!

Well this week I turn to the tried and true recipes of my fellow food bloggers for inspiration. I needed a break from the fickle cookbooks that keep leading me astray! I’m trying 3 new recipes this week, more than usual, but I have high hopes! I’ll report back after I’ve tried them out

Menu Plan Monday
Monday: new recipe! baked salmon with dill (7pts per serving) with roasted asparagus and couscous
Tuesday: chili (still need to decide which chili recipe to make!)
Wednesday: new recipe! fresh fettuccine with homemade pesto and salad (5pts per serving)
Thursday: black bean enchiladas (5pts per serving but you gotta cut WAY BACK on the cheese)

I am praying this is the last real week of winter here in Kansas. I hope that once March 1st hits spring will peek it’s head out of hiding. Maybe I should be taking advantage of the endless winter and make some more soups and chili’s but fish, chicken, and quiche are what struck my fancy while planning this week’s menu (salmon and tilapia were on sale and planning my meals around the sales saves money!) I’m trying a couple of new WW recipes this week and one old reliable one! And one yet to be determined salmon recipe, if you have any fantastic but healthy salmon recipes let me know this week, I’ve got a few days to decide

Tuesday: balsamic chicken w/mushrooms with mashed potatoes and asparagus w/toasted almonds
Wednesday: broccoli tomato quiche and turkey bacon

Friday: some kind of homemade pizza on a whole wheat crust, there WILL be goat cheese on that sucker!
Saturday: some kind of salmon before I get crazy at bowling night with my friends!
