So yeah, I haven’t updated in over a week now! I promise we are still eating, just things that I’ve already posted about. Like this mushroom pasta, that I cannot get enough of! And hot dogs…we did eat hot dogs a couple of times last week. Laziness, I know, but tasty laziness! Also, I have given up baking for Lent, so no cookie recipes to share or anything. Sadness
I am trying to spend my evenings reading or exercising or talking to Tyler or maybe playing the wii…but no baking. Baking typically lends itself to me overeating, a very bad habit.
So here is my new feature, Menu Plan Monday, which many food bloggers already do but I finally realized it might be a good idea. Helps remind me that I do have food in the fridge ready to be cooked and that Chick-Fil-A will not be sad if I don’t stop by for an easy meal. You may notice a trend this week, all the recipes we are trying are Weight Watchers recipes. I will post the point values for your convenience (and mine if I decide the recipes are keepers I want to try again.) I purchased a couple of new WW cookbooks a couple of weeks ago and have spent recent evenings working on the worlds longest meal plan list EVER to make planning and cooking healthy meals a bit easier. We shall see how it all works out! I’d just like to fit in the only pair of capri pants I own when we go on vacation this summer. Because 1 pair of capri pants is all I feel comfortable owning, I’d rather buy cute tops or flip flops with my money! Not capris in a larger size.

Monday: Slow-Cooker Pot Roast with Veggies
Tuesday: Pizza @ Women’s Group! Tyler is on his own, so probably leftovers for him.
Wednesday: Quinoa Corn Chowder
Thursday: Surprise Valentine’s Dinner! Tyler is cooking so I have no clue what it will be. Probably something yummy that takes 3 hours to make (I kid, I kid…but really dinner probably won’t be ready until 9…)
Friday: Beef and Black Bean Chili
Saturday: Chicken Satay with Peanut Dipping Sauce
and side dishes? I don’t really plan those out. I did buy a head of broccoli at the store yesterday though, so we’ll eat lots of broccoli.
